Carrot and Raisin Salad

Ingredients

Amount Measure Ingredient
1/2 cupraisins
boilingwater
1 can(8 oz.) pineapple slices, -- drained
2 cupscarrots -- shredded
1/2 cupmayonnaise
1 tsp.lemon juice(opt.)

Directions

Place raisins in bowl. Cover with boiling water. Let stand 5 minutes. Drainwell. Cut pineapple into small pieces, mix with raisins and carrots. Cover andchill. Just before serving, blend in mayonnaise. Sprinkle with lemon juice ifdesired. One of Martha's favorites.
