Place vegetables in a microwave-proof baking dish. Cover dish with plastic wrap;turn back one corner. Microwave on HIGH 2 1/2 minutes. Stir. Lay halibut overvegetables.Mix lemon juice, olive oil, and lemon pepper seasoning in a small bowl. Pour overfish.Cover dish with microwave wrap. Turn back one corner and microwave on HIGH 4-5minutes or until fish just flakes when tested with a fork. Let stand 1-2 minutesto complete cooking...Garnish with tomato and parsley.
