Real Corn Bread

4 Tbsp.oil (or half butter and half oil)
2 cupscornmeal
1 tsp.salt
1 tsp.baking powder
1 largeegg
1 1/2cupsmilk or buttermilk
sugar ifdesired

Directions

Place oil in a round, 9-inch cast-iron skillet or similar baking pan. Put theskillet in the oven and heat until the oil is hot. Mix the cornmeal, salt andbaking powder (and sugar) in a medium bowl. Add the egg and milk or buttermilk andstir until just blended.Remove the skillet and swirl the grease around so that it coats the bottom andthe lower half of the sides. Once the skillet is coated, pour the excess oil inthe skillet into the cornmeal mixture and stir. Mix lightly just until blended,then pour batter into hot skillet and put in the oven for 20 minutes, or until thebread is firm in the middle.
