Seafood Puff Shells

Ingredients

Amount Measure Ingredient
1 cupwater
1/2 cupmargarine
1 cupflour
1/4 tsp.salt
1/8 tsp.ground cayenne
1 wholeegg
2egg whites

Directions

Combine water and margarine in a saucepan and bring to a boilAdd flour all at once and stir vigorously until mixture forms a ball and leaves thesides of the pan. Remove from heat. Cool 5 minutes.Add whole egg and egg whites, one at a time, beating vigorously by hand after eachaddition. Continue beating until a stiff dough is formed.Drop by tablespoons on cookie sheet. Bake at 425° for 15 minutes. Reduce heat to350° and continue baking about 10 minutes until golden brown. Cool before filling. Smoked Salmon Filling 1 (7 3/4 oz.) can smoke-flavored salmon, drained and flaked.1/2 cup lettuce, finely chopped2 Tbsp. mayonnaise2 Tbsp. parsley, chopped2 Tbsp. bacon bitsCombine salmon with remaining ingredients in bowl. Mix. Cut off tops of puffshells. Fill each shell. Serve immediately. Lobster Filling (or canned tuna, crab, imitation crab) 1 cup lobster meat, diced finely1/2 cup tomato, diced2 Tbsp. green onion, minced2 Tbsp. celery, finely minced2 Tbsp. mayonnaise1/3 tsp. lemon pepper seasoning Mix all ingredients together. Cut off tops of shells and fill. Serve immediately.
