Vegetable Beef Kabobs

1 1/2lbs.boneless beef sirloin
2/3 cupbeef broth
1/3 cupsoy sauce
2 Tbsp.vegetable oil
1 teaspoongrated gingerroot or 1/4 tsp. ground ginger
1 clovegarlic -- minced
1/2 tsp.dried tarragon
18 smallwhole onions
3to 4 small zucchini, cut in 1-inch pieces
2 largesweet red peppers, cut in 1-in. pieces

Directions

Cut beef into 1-1/4-inch cubes; place in a self-sealing plastic bag. In a smallbowl, combine broth, soy sauce, oil, ginger, garlic and tarragon; pour over meat inbag. Seal bag and let stand at room temperature for 45 minutes. Drain meat,reserving marinade. Thread meat, onions, zucchini and red pepper alternately onsix skewers. Grill over medium-hot coals, turning occasionally and basting withthe marinade. Cook about 12 minutes or until the meat and vegetables reach desireddoneness. Serve with hot rice.
